As the winter season is here, with a wide range of winter produce and a variety of vegetables available in markets, it is almost customary to begin our courses with a warm bowl of soup. Here is a healthy and delightful soup recipe for you to enjoy.
Tomato Coriander shorba (soup) is tangy and mildly spicy. It is a healthy soup, good to warm you up in winter and also to lend a hand when you are suffering from a bout of cold and cough, while also clearing any congestion in the nose and throat. The spices are well-balanced and it can be served as an appetizer or along with the main meal. You can pair this shorba with home made Pita bread or other types of bread for a hearty meal.

Serving size: For 3 or 4 people
Ingredients
1 tsp dried coriander seeds
2 tsp fresh coriander stem (chopped)
1 onion slice
2 cups chopped tomatoes
1 tsp ginger garlic paste
2 cardamom
1 piece cinnamon
1 bay leaf
3-4 cloves
3 tsp ghee
5-6 pepper
1 tsp red pepper
1 tsp coriander cumin powder
Salt to taste
Directions
Heat ghee in a pan, add all the spices, add ginger garlic paste and sauté.
Add onion slices, chopped coriander stalks and sauté for 2 more minutes.
Add salt, red chili powder, cumin powder, turmeric and finely chopped tomatoes. Mix well.
Add 2 cups of water and let the mixture boil for 10 to 15 minutes.
Pour into serving bowls, garnish with finely chopped coriander, and relish while hot.
