Piña Colada Paneer Delight

A tropical fusion dessert that brings together the richness of fresh paneer, the creaminess of coconut milk and the fruity sweetness of pineapple. Inspired by the classic Piña Colada, this chilled kheer is a refreshing twist on the traditional Indian dessert, making it perfect for festive occasions and elegant dinner parties.

Cooking Time: 15 minutes
Chilling Time: 3–4 hours
Total Time: 25 minutes + chilling
Serves: 6

Ingredients
- 500 g fresh homemade paneer (crumbled)
- 400 ml coconut milk
- 1 cup full-fat milk
- ½ cup pineapple crush (adjust to taste)
- ¼ cup sugar or as required
- ½ tsp vanilla extract (optional)
- 1 tbsp chopped pistachios
- 1 tbsp coconut flakes
- Little saffron strands
- Few dry rose petals
Method:
- Heat the milk in a heavy-bottomed pan and bring it to a gentle simmer.
- Add the crumbled paneer and cook on low heat for 5–7 minutes, stirring gently.
- Pour in the coconut milk and continue cooking for another 3–4 minutes.
- Do not boil vigorously.
- Add sugar and stir until dissolved.
- Turn off the heat and let the mixture cool slightly.
- Mix in the pineapple crush only after the milk has cooled a little to prevent curdling.
- Add vanilla extract
- Chill for 3–4 hours before serving.
- Garnish with coconut flakes, pistachios ,rose petals and saffron strands
Tips:
For the best flavour, use chilled coconut milk and fold in the pineapple crush only after cooking. Garnish with coconut flakes and fresh Piñaapple cubes for a beautiful tropical presentation.
