Vegetarian Egg Curry in Green Dressing

An extremely popular and innovative north Indian curry recipe the curry base carries the same texture as a typical palak paneer curry but the palak is substituted with aloo and paneer kofta. The koftas are prepared, assembled and shaped in such a way that it looks like an egg and hence they are named vegetarian eggless egg curry.It is high in fiber,100 percent gluten-free and with a lot of iron and protein.

Ingredients:

For eggless egg preparation:

  • 1 cup paneer, grated
  • ¼ tsp salt
  • 2 potato, boiled and grated
  • 2 tbsp corn flour
  • ½ tsp salt
  • 1/2 cup grated Cheddar cheese
  • Ooil, for frying

For Gravy:

  • 2 tbsp butter
  • 1 tsp cumin
  • ½ onion, finely chopped
  • 1 tsp ginger garlic paste
  • 2 green chilies
  • Pinch of turmeric
  • ½ tsp coriander powder
  • ½ tsp cumin powder
  • ½ tsp garam masala
  • 1/3 tsp. mango powder
  • 1 tsp salt
  • 1 cup water
  • 1 tsp kasuri methi
  • 2 tbsp coriander, finely chopped

Instructions:

To make eggless egg:

  • Place one cup grated Cheddar cheese in a bowl and form small yolk-sized cheese balls. Set aside
  • In a separate large bowl, take two potatoes, ½ cup paneer, 2 tbsp corn flour and ½ tsp salt to form the white portion of the eff. Mix well making sure everything is well combined forming a dough
  • Grease your hand with oil and pinch a ball sized mixture
  • Roll and flatten slightly, place a small ball sized prepared yolk in the center
  • Bring the sides of the dough together and prepare an egg shaped kofta
  • Fry over hot oil on medium flame until it turns golden brown
  • Drain off the egg shaped kofta and set aside

To make gravy:

  • Heat oil/butter in a pan, add finely chopped onion, ginger-garlic paste, green chili and saute until onions turn golden brown.
  • Add washed and chopped spinach and saute till it turns soft.Turn off the flame
  • Cool the sauteed items and then grind to a smooth paste. Set aside
  • In a large kadai (wok) heat 2 tbsp oil/butter
  • Add the spinach puree along with a pinch of turmeric, coriander powder, cumin powder, mango powder, garam masala and salt, and saute the mixture over low flame until the spicy aroma arises
  • Add a little water and mix well to adjust the consistency
  • Cook until everything is well combined
  • Turn off the flame, add the fried eggless egg kofta to the spinach gravy
  • Enjoy the vegetarian egg curry with bread, roti or rice.
