Vegan and gluten-free, these hot garlicky potato-millet bites are an ethereal bliss to savor with their mouth-melting texture and perfect combination of sweet, sour and spicy seasoning. Anyone who loves potato based foods can also take delight in that these bites are not only gluten free but also fiber rich from their combination with millet flour, and they are not deep-fried either. These hot bites are one of those potato recipes that will be loved by kids and adults alike.

Total time: 30-40 min.
Serving: 20 – 25 bites

Ingredients:
3 medium potatoes (400g)
1 cup barnyard millet flour
2-3 tbsp water or as required
1/2 tsp salt
2 tbsp sesame oil
1 tbsp butter
2 tbsp chopped garlic
1 tsp chili powder
1 tsp chili flakes
1 tsp brown sugar or honey
1/4 tsp black pepper
1 tbsp soy sauce
1 tbsp tomato ketchup
1 tsp apple cider vinegar
1 tsp sesame seeds
2 tbsp roasted crushed peanuts
1 tbsp chopped green onion
1 tbsp coriander leaves
Little bit salt
Boiling water
Cold ice water

Instructions:

  • Boil potatoes, peel and grate them
  • While potatoes are still warm place them in a bowl along with millet flour, salt and a little water, and knead to a smooth dough
  • Pinch out a small piece of dough and shape into a ball, press down to flatten slightly Dip your finger in oil and make a slight depression in the center of the dough ball
  • Repeat the above for the rest of the dough
  • Place a large pot of water on heat and bring to boil
  • Transfer dough balls to the pot and boil for about 5 minutes
  • When the dough balls begin to float to the top scoop them out and transfer to a bowl of ice-cold water
  • Once cooled completely strain them to bowl
  • In a separate bowl add all seasoning spices and soya sauce
  • Heat oil and butter in a pan and cook the chopped garlic in it until brown
  • Pour the hot garlic oil over the soya sauce- seasoning spice mix
  • Add the strained dough balls and mix to coat them evenly with the seasoning
  • Add chopped spring onion and coriander as garnish to the bites
  • Serve hot.
