Creamy Red Bell Pepper Sauce With Broccoli Rice

Ingredients:
For the Creamy Sauce:
- 1 tbsp butter
- 1 large roasted red bell pepper
- 1/4 cup paneer
- 1 cheese cube
- 1 tsp ginger-garlic paste
- Salt
- 1/2 tsp.white pepper powder
- 1/2 cup chopped yellow-green bell pepper
- 1/2 tsp chili flakes
- 1/2 tsp oregano
- Little milk to adjust consistency.
For the Broccoli Rice:
- 1 cup broccoli florets (blanched and finely chopped)
- 2 cup cooked rice
- 2 tbsp.butter
- 1 tbsp.garlic (finely chopped)
- 1 tbsp parsley (chopped)
- 1 green chili chopped
- 1 tsp salt
- 1/4 tsp oregano
- 1/2 tsp vinegar
Instructions:
To make broccoli rice:
- Sauté the garlic in a large wok with butter over low heat for 30 seconds
- When garlic starts turning golden brown, add in the green chili, broccoli and mix
- Add in the cooked rice, salt, parsley, oregano, and vinegar
- Mix well till you have a homogeneous mixture
To make sauce:
- Puree roasted and skinned off red bell peppers, ginger-garlic paste and paneer in a blender until smooth
- In a small saucepan over medium-low heat, melt butter
- Once melted, add chopped yellow-green bell peppers and saute it for a minute
- Add puréed peppers, cheese cube, chili flakes ,oregano and salt to taste
- Cook until slightly thickened, stirring occasionally for about 2 minutes
- Serve hot with rice.
