An easy to prepare dish, Lemon Rice is tangy, crunchy and bursting with lemon flavor. It is a delicious way to turn plain rice into an exotic dish and is the perfect accompaniment to any meats or veggies as a side-dish. It is a healthy option that is surprisingly refreshing and pairs perfectly with pickle or papadum as accompaniment for a great dinner meal.

Total time:30 minutes
Serving: 3 to 4

2 cups Basmati Rice , (Washed, rinsed and soaked)
Salt to taste
For tempering:
1 tbsp chana dal
1 tbsp urad dal
2 tbsp peanuts
1 tsp mustard seeds
2 dry red chilies
5-10 curry leaves
3-4 green chilies, (Slit)
1/4 tsp turmeric powder
1 tbsp grated ginger
1 lemon juice
1 tsp lemon zest
For garnishing:
Few coriander leaves
1 tsp oil/gee (optional)

Cook the rice, fluff and set aside
Heat oil in a pan, when hot add mustard seeds and let them start to pop
Add curry leaves, peanuts and wait for a few seconds
Add turmeric and red chili and stir together
Add in the rice and freshly squeezed lemon juice, lemon zest and gently mix well
Add salt if the cooked rice was not salted.
Cook for 2 minutes, taste and adjust salt and lemon.
Take off the heat and let it sit covered for 2 minutes
Before serving, garnish with coriander leaves and a dash of ghee.
