Royal Purple Cabbage Rice

When it comes to creating a dish that is both visually striking and light on the palate, Royal Purple Cabbage Rice stands out effortlessly. Servings: 3-4.
Ingredients:
- 2 cups cooked rice (preferably cooled)
- 1 cup purple cabbage, finely shredded
- 1 tsp cumin seeds
- 1 tsp chilly garlic paste.
- 1 green chili, slit (optional)
- A pinch of asafoetida
- Salt to taste
- 1 tsp lemon juice
- 2 tbsp oil
- Fresh coriander for garnish
Instructions:
- Heat oil in a pan, add cumin seeds, curry leaves, chilly garlic paste and a pinch of hing
Sauté till fragrant. - Add finely shredded purple cabbage, and salt
- Sauté on medium flame for 3–4 minutes until the cabbage wilts slightly but retains crunch and color.
- Add the cooked rice to the pan. Mix gently to coat with the tempering and cabbage evenly without mashing them.
- Cook for 1–2 minutes on low flame.
- Add lemon juice and mix
- Garnish with coriander leaves and serve hot
Additional notes:
- Here I served the dish with a scoop of flavorful pav bhaji on the side.
- To add more body and flavor to the dish, you can try optional additions such as:
- Chopped bell peppers, carrots, sweet corn, or green peas for more body, flavor
- Paneer (cottage cheese) sautéed long with cabbage for extra texture and color.
- Stir in a handful of cashews or roasted peanuts for added crunch.
