Vegetable Chop Suey

Vegetable Chop Suey is a delicious savory dish prepared with crispy noodles and saucy stir-fried vegetables. Below is an Indian adaptation of the popular American Chinese dish, with a mix of healthy vegetables in a flavorful, sweet and tangy sauce.

Ingredients

  • 1 pack regular instant noodles
  • 2 tbsp vinegar
  • 1 tbsp soya sauce
  • 2 tbsp Schezwan sauce
  • 4 tbsp tomato ketchup
  • Oil for deep frying
  • 1 tbsp sesame oil
  • 1 carrot thinly chopped
  • 1 capsicum thinly chopped
  • 1 large onion (sliced)
  • 5-6 French beans (thinly sliced)
  • 3 baby corn (sliced)
  • 2 tbsp spring onion (chopped)
  • ½ cup water
  • 1 vegetables stalk cube
  • 1 tbsp corn flour for coating + 2 tbsp for thickening sauce (mix in 2 tbsp water)
  • Salt and pepper to taste

Instructions:

  • Boil noodles until al dente
  • Drain the water and run cold water over the noodles
  • Let them rest so that they become a little dry
  • Chop carrots, capsicum, green beans, baby corn, and onions and set aside
  • Heat some oil in a wok
  • Place the boiled noodles in a large plate and sprinkle some corn flour over it
  • Mix gently so that the noodles are evenly coated with corn flour
  • Add the noodles into the wok and when one side is fried and turns golden, flip it using a spatula.
  • Remove noodles on a paper towel so that extra oil can be absorbed. Set aside
  • Remove oil from the wok leaving only a tablespoon of it
  • Add ginger garlic paste to the wok and saute for a few seconds
  • Add onions, carrots, beans and capsicum and baby corn and saute over high flame until they are cooked but still crispy
  • Add some black pepper,salt, sugar, Schezwan sauce, tomato ketchup, soya sauce and vinegar, and mix well
  • Add water and bring the mixture to a simmer
  • Add the vegetable stock cube with some water
  • In a small bowl mix cornflour and water, and add it to the wok
  • Let the sauce thicken and give a glossy appearance to the mixture.
  • Add the spring onions and mix well.
  • Line a serving platter with fried noodles
  • Top the noodles with the sauce and vegetable mix
  • Serve hot.
