Starting this week, Indian Chef Chhaya Thakker, who has a huge following online on WhatsApp and YouTube will be sharing her favorite recipes and cooking tips with readers of The Times Kuwait.<\/span><\/p>\n

Hailing from a small town in the Indian state of Gujarat,\u00a0 Chef Chhahya has lived in Kuwait for the past 22 years with her husband and two sons. An active participant in various cultural events organized by the Indian community in Kuwait, Chef Chhaya seeks to support and share her love for creative cooking by constantly engaging with her online followers.<\/span><\/p>\n

Her Divine Delights cooking group on WhatsApp has gained a large following in view of the lockdown that has confined people to their homes. She has also been busy conducting live cooking demonstrations on Zoom, Facebook, and Instagram through the Divine Delights cooking group, as well as demonstrating her cooking skills on YouTube channels dedicated to food and cooking.<\/span><\/p>\n

Sprouts beetroot croquettes<\/span>
\n(stuffed with cheesy broccoli) 10-12 pieces.<\/span><\/h4>\n

Ingredients:<\/strong>
\n2 cup mix sprouts
\n\u00bd cup beetroot pieces
\n1tsp Ginger-Garlic paste
\n2 tbsp Oats powder
\n1 tbsp Sesame seeds
\n1tsp Red chilli powder
\nSalt as per taste
\nPinch of soda
\nFor stuffing:
\n1 cup blanched broccoli florets
\n\u00bd cup mozzarella cheese
\nSalt as per taste
\n\u00bd tsp Black pepper powder
\nFor dip:<\/strong>
\n1 cup curd
\n1 tsp Honey
\n\u00bc tsp Lime juice
\n\u00bc tsp Turmeric
\nPinch of salt(optional)<\/p>\n

Preparation:<\/strong>
\n\u2022 In a chopper grind well the sprouts mix and beetroot pieces.
\n\u2022 Pour in a bowl and season with salt, red chilli powder, sesame seeds,
\noats powder and pinch of soda. Mix it well and set aside
\n\u2022 In a chopper add broccoli and cheese, salt, black pepper and blend
\nit for the filling
\n\u2022 Take a small portion of beetroot mixture, flatten it gently and fill with
\nstuffing
\n\u2022 Now gently press together the sides to make a ball
\n\u2022 Mold it in the shape of a croquette with a little oil or water
\n\u2022 Fry in hot oil on high flame and after 2-3 seconds fry it on a slow flame.
\n\u2022 Alternatively, brush both sides with a little oil and bake on 170 C for
\n10-15 min<\/p>\n

For the dip<\/strong>
\nIn a small bowl mix all dip ingredients well and serve it with sproutsbeetroot croquettes.<\/p>\n
