You can quickly rustle together this refreshing salad from ingredients that are readily available in the local market, and impress guests and friends alike by your cooking prowess.<\/p>\n<h4><strong>Ingredients for 4 portions<\/strong><\/h4>\n<ul>\n<li>Shrimps 300g<\/li>\n<li>Scallops 300g<\/li>\n<li>Olive oil 50ml<\/li>\n<li>Tomato 50g<\/li>\n<li>Onion 50g<\/li>\n<li>Mango 50g<\/li>\n<li>Coriander leaves 20g<\/li>\n<li>Cherry tomato 50g<\/li>\n<li>Rosemary 20g<\/li>\n<li>Salt 5g<\/li>\n<li>Pepper 5g<\/li>\n<li>Baby spinach leaves 40g<\/li>\n<li>Romaine lettuce 40g<\/li>\n<li>Avocado 1pc<\/li>\n<li>Radish red 50g<\/li>\n<li>Lemon juice 20ml<\/li>\n<li>Garlic 20g<\/li>\n<li>Green chili 10g<\/li>\n<\/ul>\n<h3><strong>Instructions:<\/strong><\/h3>\n<p><strong>For shrimps and scallops:<\/strong><\/p>\n<ul>\n<li>Marinate the shrimps and scallops with olive oil, chopped rosemary, salt, pepper and lemon juice, and set aside for an hour<\/li>\n<li>Place a pan over high heat, add olive oil and flavor with garlic and rosemary.<\/li>\n<li>Add the marinated shrimps, scallops and gently fry till they are fully cooked and attain a golden-brown color.<\/li>\n<li>Remove from fire and set aside<\/li>\n<\/ul>\n<p><strong>For salsa:<\/strong><\/p>\n<ul>\n<li>Finely chop the avocado, mango, coriander, onion, and green chili<\/li>\n<li>Place them in a bowl, add lemon juice, olive oil, salt, pepper and toss together<\/li>\n<li>Slice the radish and cherry tomatoes, clean the lettuce and baby spinach,<\/li>\n<\/ul>\n<p>To serve, place the salsa in the center of a plate, arrange the fried shrimps and scallops on top, and arrange the cherry tomato, radish and lettuce, and baby spinach around the plate.<\/p>\n<p>Serve hot or cold.<\/p>\n<hr \/>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-133351\" src=\"http:\/\/timeskuwait.com\/news\/wp-content\/uploads\/2023\/07\/Chef-Binu.jpg\" alt=\"\" width=\"200\" height=\"200\" srcset=\"https:\/\/timeskuwait.com\/news\/wp-content\/uploads\/2023\/07\/Chef-Binu.jpg 200w, https:\/\/timeskuwait.com\/news\/wp-content\/uploads\/2023\/07\/Chef-Binu-150x150.jpg 150w\" sizes=\"auto, (max-width: 200px) 100vw, 200px\" \/><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #333399;\">Creative, enthusiastic and with a passion for food, <strong>Chef Binu Joseph<\/strong> is currently Chef at The Regency Hotel Kuwait.
