The recipe below, of gujiya stuffed with \u2018tres leches\u2019 khoya (milk solids) is an adaptation from the \u2018Tres Leches\u2019 (three milk) cake popular in Spain and elsewhere. Tres leches khoya gujiya not only looks enticing but is also simply delicious and a perfect sweet for any occasion.<\/p>\n<p><strong>Total time:<\/strong>1 hour<\/p>\n<p><strong>Serving:<\/strong>12 to 15 pieces<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>To make Tres Leches milk mixture:<\/strong><br \/>\n\u2022 1 cup evaporated milk<br \/>\n\u2022 1\/2 cup sweet condensed milk<br \/>\n\u2022 1\/2 cup heavy cream<br \/>\n\u2022 2 tbsp rose syrup<br \/>\n\u2022 For dough:<br \/>\n\u2022 2 cup all purpose flour<br \/>\n\u2022 \u00bc tsp salt<br \/>\n\u2022 4 tbsp ghee (clarified butter)<br \/>\n\u2022 \u00bd cup lukewarm water<br \/>\n\u2022 For stuffing:<br \/>\n\u2022 200g khoya (milk solids powder)<br \/>\n\u2022 \u00bd cup powdered sugar<br \/>\n\u2022 2 tbsp cashew (chopped)<br \/>\n\u2022 2 tbsp desiccated coconut<br \/>\n\u2022 2 tbsp pistachios (chopped)<br \/>\n\u2022 2 tbsp almonds (chopped)<br \/>\n\u2022 \u00bc tsp cardamom powder<br \/>\n\u2022 Ghee\/oil for frying.<\/p>\n<p><strong>Instructions:<\/strong><br \/>\n<strong>To make Tres Leches milk mixture:<\/strong><\/p>\n<p>\u2022 Whisk together evaporated milk, sweetened condensed milk and heavy cream until well blended. Set aside.<\/p>\n<p><strong>To make dough for gujiya:<\/strong><\/p>\n<p>\u2022 Sift all purpose flour into a mixing bowl, add ghee and mix well<\/p>\n<p>\u2022 The mixture should have a crumbly texture<\/p>\n<p>\u2022 Add lukewarm water to the mixture and knead well to a stiff dough<\/p>\n<p>\u2022 Cover the dough with damp cloth and set aside for 15 minutes<\/p>\n<p>\u2022 Meanwhile, gently roast khoya powder in a pan for 2 minutes<\/p>\n<p>\u2022 Take pan off fire and set aside to cool<\/p>\n<p>\u2022 Once cooled, transfer to a mixing bowl along with other stuffing ingredients<\/p>\n<p>\u2022 Mix well so as to avoid any lumps<\/p>\n<p><strong>To make gujiya:<\/strong><\/p>\n<p>\u2022 Pinch a small ball sized dough portion and roll out in slightly thick circular shape<\/p>\n<p>\u2022 Apply water on one side of rolled dough, and place another rolled dough on top<\/p>\n<p>\u2022 Place a tablespoon of khoya mixture stuffing in center of rolled puri<\/p>\n<p>\u2022 Fold the puri from all sides to enclose stuffing, and seal edges with water<\/p>\n<p>\u2022 Shape the edges to a petal shape. Do the same with the rest of the dough<\/p>\n<p>\u2022 Deep fry the gujiya in medium hot ghee or oil until it turns golden pink in color<\/p>\n<p>\u2022 Remove gujiya and place over a kitchen towel to remove excess ghee or oil<\/p>\n<p>\u2022 Serve in tres leches milk mixture, garnished with rose petals and pistachios<\/p>\n<p>\u2022 Use immediately or do not store for more than two days, as the khoya could spoil.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Gujiya, a sweet, crescent-shaped, deep fried pastry stuffed with milk solids and nuts, is a traditional sweet popular in many North Indian states.
