This fluffy and flavorful rice is made with only a few simple ingredients. Arroz rojo, which means \u2018red rice\u2019 in Spanish, is the most requested side dish in Mexican cuisine and is perfect for filling burritos and tacos.<\/p>\n<p>Arroz rojo can be infused with the flavors of tomato and vegetable broth, and further uplifted with the addition of leftover ground beef or chicken mixed in, and can be served as an entire meal in a bowl.<\/p>\n<p><strong>Total time:<\/strong> 30 minutes<br \/>\n<strong>Serving:<\/strong> 4 to 5 people<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>2 cup 80 percent cooked, long-grain rice or red rice<br \/>\n2 tbsp olive oil<br \/>\n1 small onion, finely chopped<br \/>\n1 tbsp ginger-garlic paste<br \/>\n1\/2 cup tomato puree<br \/>\n1\/3 cup water<br \/>\n2 tbsp tomato paste<br \/>\n2 tbsp tomato ketchup<br \/>\n1 tsp hot chili sauce<br \/>\n1 cup chopped green capsicum, green beans, carrots, green pea, fresh corn<br \/>\n1\/2 cup small paneer(cottage cheese) cubes<br \/>\n1 tsp chili powder<br \/>\n1\/2 tsp chili flakes or oregano<br \/>\n1\/4 tsp black pepper powder<br \/>\n\u00bd tsp cumin<br \/>\nSalt to taste<br \/>\nChopped cilantro or spring onion optional<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-114373\" src=\"http:\/\/timeskuwait.com\/news\/wp-content\/uploads\/2022\/12\/20221201_132605.jpg\" alt=\"\" width=\"598\" height=\"895\" srcset=\"https:\/\/timeskuwait.com\/news\/wp-content\/uploads\/2022\/12\/20221201_132605.jpg 598w, https:\/\/timeskuwait.com\/news\/wp-content\/uploads\/2022\/12\/20221201_132605-200x300.jpg 200w, https:\/\/timeskuwait.com\/news\/wp-content\/uploads\/2022\/12\/20221201_132605-281x420.jpg 281w\" sizes=\"auto, (max-width: 598px) 100vw, 598px\" \/><\/p>\n<p><strong>Instructions: <\/strong><\/p>\n<ul>\n<li>Heat olive oil over medium heat.
