Vegan Winter Bars

Winter is a season when nutritious vegetables and fruits are readily available, and in some places this is the time when water chestnuts are abundant in the market. The interesting aspect of this recipe is that it can be tailored to make it free of various ingredients that people could be allergic to, including soy, gluten, nuts, or dairy, and to fit your personal dietary preference, whether it is a keto, paleo or low-carb diet.

Serving: 12 pieces

Ingredients:
1/3 cup extra-virgin coconut oil
1 cup water chestnut flour (singhara atta in Hindi)
1/3 to 1/2 cup grated jaggery
1/4 cup coconut powder

Instructions:
Heat coconut oil in a pan and when it gets hot, add the water chestnut flour
Roast the flour until the distinct aroma of the flour rises
Add jaggery and coconut powder and keep stirring
Turn off the flame
The mixture will soon begin to leave the sides of the pan
Immediately, start spreading it on a tray greased with coconut oil
Sprinkle some coconut powder and even out the surface
While warm, cut into rectangle bars, or the shape of your choice
Let the mixture cool, before serving.
